Room conditions

Yeast (and your SCOBY) work best in a warm (70-78 degrees) environment with not too many changes in temperature.   Sunlight is also harmful to the SCOBY so it is best to keep your Kombucha in a cabinet or closet.  Airflow is important so make sure that the cabinet door allows air to come in and out and is not tightly closed.
