After giving my Kombucha to family and friends to test, by far the most favorite flavor combination I’ve made is Ginger peach.  Here’s what I do.

–  4-6 pieces of diced ginger (make sure it is cut so that it fits through the bottle opening)

–  3-4 tbsp of peach nectar (fresh or frozen peaches would work if you have them though I haven’t done this yet)

–  enough Kombucha to fill the bottle

Add several pieces of diced fresh ginger to a 12 oz or 16 oz bottle (glass or plastic, see the section on bottling for more information about this).  Then add 3 to 4 tablespoons (1.5 – 2 oz) of juice (I like peach nectar but you can definitely experiment).  Fill the bottle the rest of the way leaving 1 to 1.5 inches of headroom.  Cap your bottle.  Wait 2-4 days and you should have beautifully carbonated Kombucha.

I’ve also tried pomegranate juice, citrus juice (lemon, lime, orange, fresh squeezed is best), as well as a blend of acai blueberry and pomegranate.  There are tons of possibilities so try flavors that you like.  You can also use fresh fruit as well if you have it.
